Function:It is extensively used wherever a lemon-like aroma is desired.
An essential component in lemon-type, verbena-type accords, and in the compounding of artificial lemon, bergamot and petitgrain oils. It serves as the starting material for synthesizing ionones and methyl-ionones. Its strong masking power also neutralizes undesirable odors in industrial processes. In flavours it appears in ginger, lemon, lime, sweet orange, grapefruit, apple, cherry, grape, strawberry and spicy profiles; it is likewise employed in alcoholic beverage flavours.
